Skillet Queso Recipe
This recipe delivers a gooey, cheesy, and flavorful queso dip perfect for chips, veggies, or topping your favorite Tex-Mex dishes.
Yields: 4-6 servings

Ingredients:
1 lb. of ground beef
1 (10 ounce) can of Rotel, undrained
1 can green chiles
8 ounces cream cheese
8 ounces Pepper Jack cheese, shredded
8 ounces Monterey Jack cheese, shredded
1 packet of taco seasoning
1 cup milk or half-and-half
Salt to taste
Optional toppings: chopped cilantro, sliced green onions, pickled jalapeños
Equipment:
10-inch cast iron skillet or other oven-safe skillet
Wooden spoon or spatula
Measuring cups and spoons
Instructions:
Cooking the ground beef: Cook the ground beef and discard the extra grease. Put the packet of taco seasoning over the ground beef and continue to cook until all seasoning is incorporated.
Add the cheeses: Start the skillet with the bottom layer of beef, then add in your shredded cheeses and block cream cheese. Add in the Rotel, and green chiles, and milk.
Baking in the oven: Put the skillet inside the oven at 325 degrees and take it out after 10 minutes to stir until all ingrideints are completely melted and the queso is smooth and creamy. This is about 30 minutes total with 3 times stirring.
Adjust Consistency (Optional): If the queso is too thick for your liking, stir in 1 tablespoon of milk or half-and-half at a time until you reach your desired consistency.
Serve: Serve the skillet queso immediately while it's hot and gooey. Garnish with your favorite toppings like chopped cilantro, sliced green onions, or pickled jalapeños.
Tips and Variations:
Spice Level: Adjust the amount of diced green chilies or add a pinch of cayenne pepper for extra heat.
Keep Warm: If you're not serving immediately, you can keep the queso warm in a slow cooker on the warm setting or in a low oven (around 200°F or 95°C), stirring occasionally to prevent a skin from forming.
