Lone Star Chili

Lone Star Chili Recipe

This recipe yields approximately 8-10 servings.

Ingredients:

  • 2 pounds ground beef

  • 1 large yellow onion, chopped

  • 1 bell pepper, chopped

  • 2 tbsp garlic, minced

  • Olive oil

  • 1/2 cup chili powder

  • 1 1/2 tbsp ground cumin

  • 1/2 tbsp smoked paprika

  • 1/4 - 1/2 teaspoon cayenne pepper (optional, for heat)

  • 1 15 oz can crushed tomatoes

  • 1 8 oz can tomato sauce

  • 1 (15 oz) can red kidney beans

  • 2 cups water

  • Salt and freshly ground black pepper to taste

  • Optional Garnishes: shredded cheddar cheese, sour cream, chopped green onions, cilantro, cornbread or crackers for serving

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess grease.

  2. Sauté Vegetables: Add the chopped onion and bell pepper to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  3. Add Spices: Stir in the chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly, until fragrant. This helps to bloom the spices.

  4. Add Tomatoes and Beans: Pour in the crushed tomatoes and tomato sauce. Stir in the red kidney beans.

  5. Add Liquid and Simmer: Pour in the water. Bring the chili to a boil, then reduce the heat to low-medium, cover, and let it simmer for at least 30 minutes, or up to 1-2 hours, stirring occasionally. The longer it simmers, the more the flavors will meld.

  6. Season: Season with salt and freshly ground black pepper to taste. Adjust the spices if needed. If you want more heat, add more cayenne pepper or a pinch of red pepper flakes.

  7. Serve: Ladle the hot chili into bowls and garnish with your favorite toppings such as shredded cheddar cheese, sour cream, chopped green onions, or cilantro. Serve with cornbread or crackers on the side.
