Chicken Quesadillas



Chicken Quesadillas Recipe
This recipe is a simple and customizable way to make delicious chicken quesadillas. Feel free to adjust the fillings and seasonings to your liking!
Yields: 4 quesadillas
Prep time: 15 minutes (if using pre-cooked chicken, 30 minutes if cooking chicken)
Cook time: 10-15 minutes
Ingredients:
1 tablespoon olive oil (if cooking chicken)
1 boneless, skinless chicken breast (about 6-8 ounces), cut into small pieces (optional, can use pre-cooked shredded chicken or rotisserie chicken)
1 packet taco seasoning or your favorite blend of chili powder, cumin, garlic powder, onion powder, and smoked paprika
8 flour tortillas (8-10 inch size)
2 cups shredded cheese (cheddar, Monterey Jack, Colby Jack, or a Mexican blend work well)
Optional fillings:
1/2 cup diced bell peppers (any color)
1/2 cup sliced onion
1/4 cup corn (canned, frozen thawed, or roasted)
1/4 cup black beans, rinsed and drained
Salsa, for serving
Sour cream or Greek yogurt, for serving
Guacamole, for serving
Chopped cilantro, for garnish
Equipment:
Large skillet
Cutting board

Instructions:
1. Cook the Chicken:
Heat the olive oil or butter (in video) in a large skillet over medium heat.
Add the diced chicken and sprinkle with the taco seasoning (or your chosen spices), salt, and pepper to taste.
Cook until the chicken is cooked through and no longer pink inside, about 5-7 minutes.
If using pre-cooked chicken, skip this step.
2. Sauté Vegetables (optional):
If using bell peppers and onions, add them to the skillet after the chicken is cooked (or in a separate skillet with a little oil).
Cook until they are softened, about 5-7 minutes.
3. Assemble the Quesadillas:
Place one tortilla with butter in the skillet over medium-low heat.
Sprinkle about 1/4 cup of the shredded cheese evenly over half of the tortilla.
Add about 1/4 of the cooked chicken (and any cooked vegetables, corn, or black beans if using) over the cheese.

4. Cook the Quesadillas:
Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted and gooey.
Carefully flip the quesadilla with a spatula and cook the other side.
5. Repeat:
Remove the cooked quesadilla from the skillet and set aside.
Repeat the process with the remaining tortillas and filling.
6. Serve:
Cut each quesadilla into wedges (usually 2 or 4).
Serve hot with your favorite toppings like salsa, sour cream, guacamole, and chopped cilantro.
