BBQ Pork Ribs

BBQ Pork Ribs Recipe

This recipe yields 4-6 servings.

Ingredients:

  • 1 rack of baby back ribs

  • Dry Rub:

    • 2 tablespoons brown sugar

    • 2 tablespoons granulated sugar

    • 1 tablespoon salt

    • 1 teaspoon black pepper

    • 1 teaspoon smoked paprika

    • 1 teaspoon chili powder

    • ½ teaspoon garlic powder

    • ½ teaspoon onion powder

    • ½ teaspoon dried oregano

    • ½ teaspoon cayenne pepper

  • Yellow mustard (as a binder)

  • BBQ Sauce:

    • 1 ¼ cups ketchup

    • ⅓ cup brown sugar

    • ½ cup water

    • 4 teaspoons sriracha sauce (Tabasco recommended)

    • 1 tablespoon apple cider vinegar

    • 1 tablespoon Magi seasoning sauce

    • 1 tablespoon smoked paprika

    • 1 teaspoon onion powder

    • 1 teaspoon garlic powder

    • 1 teaspoon black pepper

    • 1 ½ - 2 teaspoons salt (or to taste)

Equipment:

  • Baking pan

  • Aluminum foil

  • Paper towels

  • Small mixing bowls

  • Measuring spoons and cups

  • Saucepan

  • Pastry brush (optional)

Instructions:

  1. Prepare the Ribs: Remove the ribs from the packaging and pat them dry with paper towels. Remove the membrane from the back of the ribs. This can be done by sliding a knife under the membrane and pulling it off, using a paper towel for grip if needed.

  2. Apply Mustard and Dry Rub: Lightly coat both sides of the ribs with yellow mustard. In a small bowl, combine the dry rub ingredients. Evenly distribute the dry rub over both sides of the ribs, patting it down to adhere.

  3. First Bake: Cover the ribs tightly with aluminum foil, ensuring a good seal. Place the foil-wrapped ribs on a baking pan. Preheat oven to 275°F (135°C). Bake on the BOTTOM rack for 2 hours.

  4. Prepare the BBQ Sauce: While the ribs are baking, combine all BBQ sauce ingredients in a saucepan. Simmer over medium-low heat, stirring occasionally, until slightly thickened.

  5. First BBQ Sauce Application: After 2 hours, remove the ribs from the oven and carefully remove the top layer of foil. Brush half of the BBQ sauce evenly over the TOP side of the ribs.

  6. Second Bake: Return the ribs to the oven, uncovered, on the TOP rack for 15 minutes.

  7. Second BBQ Sauce Application: Remove the ribs from the oven and brush the remaining BBQ sauce over the top.

  8. Final Bake: Return the ribs to the oven, uncovered, on the TOP rack for another 15 minutes.

  9. Rest and Serve: Remove the ribs from the oven and loosely cover them with foil. Let them rest for 10 minutes before cutting and serving.

  10. Adjust the amount of sriracha and cayenne pepper to your desired spice level.

  11. Resting the ribs allows the juices to redistribute, resulting in more tender and flavorful meat.

  12. The Magi seasoning sauce adds a unique umami flavor. If you do not have it, you can add a tablespoon of Worcestershire sauce.
