Baked Salmon with Lemon-Herb Marinade Recipe

Ingredients:
1 1/2 lb salmon fillet, cut into 4 filets
2 tablespoons fresh parsley, finely chopped
2 tablespoons extra light olive oil (or vegetable oil)
2 tablespoons fresh lemon juice
3 garlic cloves, minced, pressed, or grated
1/2 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/8 teaspoon black pepper, freshly cracked
1/2 lemon, sliced into 4 rings (for garnish)

Parchment paper, silicone mat, or aluminum foil
Small mixing bowl

Instructions:
Prepare Oven and Baking Sheet:
Preheat oven to 450°F (230°C).
Line a rimmed baking sheet with parchment paper, a silicone mat, or aluminum foil.
Prepare Salmon:
Arrange the salmon fillets on the prepared baking sheet, skin-side down.
Make the Marinade:
In a small bowl, combine the fresh parsley, minced, pressed, or grated garlic, extra light olive oil (or vegetable oil), fresh lemon juice, Dijon mustard, fine sea salt, and freshly cracked black pepper.
Stir to combine thoroughly.
Baste the Salmon:
Generously spread the marinade over the top and sides of each salmon fillet, using a brush or spoon.
Top each salmon fillet with a slice of lemon.
Bake the Salmon:
Bake uncovered at 450°F (230°C) for 12-15 minutes, or until the salmon is just cooked through and flaky when gently pressed with a fork.
The internal temperature of the thickest portion of the salmon should reach 145°F (63°C) when measured with an instant-read thermometer.
Do not overcook the salmon.
Serve:
Serve the baked salmon immediately.
Notes:
Bake the salmon immediately after applying the marinade. The lemon juice will begin to cook the salmon if left to sit, which will make it tough.
Baking the salmon uncovered prevents it from steaming, which can result in overcooking.
The cook time can vary based on the thickness of your salmon fillets. Adjust the baking time accordingly.
